Quotes

I love quotes...It's like a little nugget of wisdom somebody else had, you get a lot from it in 2 seconds, little nuggets of encouragement you can read often..like a hug from a friend....I tend to collect quotes and store them in different documents or whatnot and last night I was just piddlin around and found this quote. I can't remember where I got it but it really fit the things that I am going through at the moment.

"Endure Go through the darkness and come out the other side. When you think I can't stand another minute of this, know that you can. When you think I won't make it through another day, know that you will. When you can't take another moment of the pain and the fear and the feelings of hopelessness, take another moment anyway. Chicken tortilla soup -Crockpot

Heres a new recipe for all you recipe goers. Found it on a message board I frequent:

Chicken Tortilla Soup

4 uncooked boneless, skinless chicken breast halves
2 15 oz cans black beans, undrained
2 15 oz cans rotel
1 cup low sodium salsa
4 oz can chopped green chilies, undrained
14-1/2 oz can low sodium tomato sauce
baked tortilla chips
2 cups grated fat-free cheese

1. Combine all ingredients except chips and cheese in large slow cooker.
2. Cover. Cook on low for 8 hours.
3. Just before serving, remove chicken breasts and slice into bite sized pieces. Stir into soup.
4. To serve, put a handful of chips in each individual soup bowl. Ladle soup over chips. Top with cheese.

It was REALLY good! I didn't use any of the 'light' or 'low sodium' ingredients, just regular. I also didn't do the chips bc I don't deal with soggy chips :) But it was really really good. A bit spicy for me, but since I had my 2nd my stomach doesn't do spicy very well. I just topped it with some cheese and avacado then took a tortilla and spread avacado in it to dip and it was enough 'mild' to deal with the spicy.
